In Cologne, a charming restaurant located inside an old convent that offers gourmet Franciacorta cuisine and an extraordinary wine list orchestrated by the owner and sommelier Marco Pelizzari.

Overlooking the cloister of a splendid Franciscan convent dating back to 1569, inside the Cappuccini Resort, an oasis of charm and good hospitality, the Cucina San Francesco restaurant is the realm of Marco Pelizzari, sommelier, great expert and wine collector, the only Krug Ambassador of Franciacorta.

In line with the philological restoration of the Resort, purchased by her mother Rosalba who undertook a conservative restoration completed in the 90s, the restaurant is furnished in a simple yet refined style, dominated by the white of the curtains and shabby chic furnishings. Such as the wooden tables sought by Rosalba in antique markets and vintage shops, ancient portraits, iron candelabras as well as the elegant decorative inkwells part of the mise en place, all objects that reminds us that once here there was the refectories of the convent.

Our cuisine, between ancient recipes from the Brescia area and contemporary touches, is a joy to the eye and to the palate.

The cuisine of the restaurant, headed by chef Davide Maci, combines local gastronomic traditions with creativity and more innovative techniques. Great attention is dedicated to the delicate balance between ancient and contemporary, while the choice of raw materials used is rigorous and focuses on the best local products, primarily those grown in the Resort such as herbs from the garden, vegetables and good things from the home orchard.

On the menu you can find yummy dishes such as the guinea fowl stuffed Brescia style with paccasassi of Conero and dark shallot, the tortello stuffed with chicken cacciatora, its ragù and its crest or the lamb chop with carrot toffee, paella sauce, sweet and sour onion and pak choi , but also traditional recipes that never change on the menu such as the marinated sardines from nearby Lake Iseo or the Torta di Rosa with zabaglione cream. During dinner, Marco will also be able to advise you on many delicacies, such as delicious extra virgin olive oils or the 67-year-old vinegar of the Cappuccini Reserve.

The wine list, selected by Marco, includes the great names of Franciacorta, from Ca’ del Bosco to the small Cantina Corte Fusia in Coccaglio, as well as a wide selection of Champagne Maison and Vigneron and of fine labels from the main regions worldwide famous for their wine production.

Truly a place to feel at home, with the simplicity and rigor that pays homage to the monastic tradition of this enchanted place that becomes magic in the evening when the candlelight meets the Franciacorta bubbles.

Cucina San Francesco is open from Tuesday to Thursday for dinner and also for lunch on Fridays and weekends.

The Secret

Ask Marco to visit his “secret” cellar, obtained from the ancient well of the convent, and let you taste some special vintages. A real gem, where often are served special welcome aperitifs and generous tastings.
