In Milan, Caruso Nuovo restaurant and bistro is the new hotspot of the Grand Hotel et de Milan, a high-society "parlour" for over 160 years, which has reopened in grand style with refined deco atmospheres and the cuisine signed by the chef Gennaro Esposito.
Caruso Nuovo is a place rich in atmosphere and traces of history and legends, events and illustrious people which was renewed in September 2023 with three special signatures: the art of hospitality by the Bertazzoni family, the gastronomic proposal by Executive Chef Francesco Potenza and orchestrated by chef Gennaro Esposito, and the interior design by the architectural firm Dimorestudio.
Caruso Nuovo is the new restaurant of the 5-star Grand Hotel et de Milan, which joins the historic Don Carlos restaurant with a more traditional offering and Gerry’s lounge cocktail bar. The hotel was inaugurated in 1863, and, since then, with its location within walking distance from the Teatro alla Scala and the Duomo, has been the center of the political and cultural life of the city, a favorite address for celebrities of culture, entertainment, fashion and music.

One of the few 5-star hotels in Italy still managed by the same family that founded it, the Grand Hotel is characterized, in fact, by a warm and homely style, maintaining its refined and cosy allure even in the renewed food & wine offer.
The partnership with the Campanian chef Gennaro Esposito, 2 Michelin stars at the Torre del Saracino in Vico Equense, was born, as the Bertazzoni family says, from esteem and common roots, also represented by music and art: on the one hand the liveliness of the Sorrento Peninsula with its famous Neapolitan poetry; on the other, the history and elegance of Milan and opera, with the Teatro alla Scala, the Risorgimento era and Giuseppe Verdi.
Brought to the table by Executive Chef Francesco Potenza, also from Campania, Caruso Nuovo offers a convivial, Mediterranean cuisine, based on roots and traditions, with particular reference to the Neapolitan ones and favoring the work of small suppliers selected from Lombardy and Campania.
Thus, on the menu there are the most popular dishes from Campania, from the Spaghetti with tomato from Vesuvius selected by Gennaro Esposito to the mixed pasta soup with seafood, but also the great classics of the Lombard cuisine such as the Risotto with saffron, citrus fruits and fennel or the Mondeghili with mushroom ragù, pumpkin and Provolone del Monaco cheese.
The interior design project, signed by Dimorestudio, is a return to the origins. The happy partnership between the Milanese studio and the Bertazzoni family began, in fact, with the renovation of the interiors of the Grand Hotel et de Milan in 2010.
For the restyling of Caruso Nuovo, the historical details of the environment were maintained, bringing to light ancient columns, inlays, and terrazzo floors, all typical elements of the retro high-class Milan, and then adding to them a touch of glamor.
An example of this is, in the main room, the spectacular ceiling lighting composed of 7 chandeliers by Dimorestudio combined with velvet seats and refined jacquard fabric wallpaper; while the elegant veranda overlooking Piazzetta Croce Rossa and its dehors boasts elegant retro wicker seats by Bonacina and many exotic plants.

The Secret
The name of the restaurant is a tribute to the nearby Teatro alla Scala and to the great tenor Enrico Caruso who recorded the first vinyl in history in the suite 306 of the Grand Hotel et de Milan, hence becoming a superstar in the world of music.
