Beides in German means “both”, because Caterina and Dario, executive chefs, a couple in work and life, complement each other, but also because the essence of the restaurant is based on other inseparable culinary pairings: local and international, simple and sophisticated, natural as well as shaped by the hand of man.

Caterina and Dario, after various experiences around the world, the last of which in Switzerland, were called back to their “homeland” by the entrepreneur Luciano Verzeroli, to whom they are also related by family, to give life to the new restaurant of Collina Luxury Relais, an oasis of luxury and well-being, unique of its kind in the area, inaugurated in February 2024.

At Beides, every dish is a celebration of the territory. Our gourmet zero-mile cuisine highlights the authentic flavors of local products, carefully selected from the best producers in the area.

Enthusiastic about the project, the couple toured the entire valley in search of the best local products, such as oil, cheeses, cured meats, on which to base the future menu, thinking of creating flavors that could satisfy both an international clientele and the loyal inhabitants of the area.

The result is three tasting menus, Intense, Essential and Green, with clean and delicious proposals at the same time such as the amberjack marinated in brine, the seared scampi served with yellow curry sauce, the pigeon breast with leg in croquette filled with liver mousse and apricots, or the Schwarzwaelder Kirsch Torte decomposed with fresh cherries, chocolate ganache, cherry glaze, vanilla chantilly and Kirschwasser on cocoa crumble.

The room is very romantic, with only 13 tables, each with its own panoramic window in front, as well as the Chesnut Table, made with a single recycled chestnut trunk that can accommodate up to 8 people, and the Chef Table facing the kitchen, perfect for 10 people.

Before dinner, you can have an aperitif on the terrace, perhaps at sunset when the sky is dressed in the usual, yet magical, shades of pink and purple, typical of the Valley.
The sommeliers of the hotel will be able to recommend a special wine or one of the resort’s signature cocktails.

And if you’re feeling romantic, for after dinner you can book one of the 5 independent chalets of Collina Luxury Relais, all with a veranda, private jacuzzi and view of the woods.

The next day you will be spoiled for choice, because the Relais, in addition to offering a heated indoor and outdoor pool and a wellness center, is located a few dozen kilometers from Bergamo and just over an hour from Milan, near Lake Iseo and the ski resorts of Colere and Monte Pora.

The Secret

Completely eco-sustainable, the Relais has been built using almost exclusively local materials, such as lake stone covering the walls and the recycled wood, and all the rooms are connected to each other, offering guests the opportunity, for privacy or in bad weather, to never have to leave the building.
