Inside the splendid Gallerie d’Italia museum, in the heart of Piazza della Scala, Vòce Aimo e Nadia is "a square in the square" dedicated to art, conviviality and good Italian food that embraces the five senses.

Opened in 2018, it is a point of reference at all times of the day thanks to the many “souls” that compose it: the bistro café with the artisan ice cream parlor, the Gusto 17 La Dispensa food store and the gourmet restaurant that offers the opportunity to eat in one of the most beautiful secret gardens in Milan, the one that once belonged to Alessandro Manzoni.

It was 1962 when Aimo and Nadia, life companions, moved from Tuscany to Milan and opened a trattoria in via Montecuccoli. Firm in the tradition of their homeland, they began to propose a truly innovative cuisine for the time, when gourmet in Italy meant mainly French cuisine, experimenting with simple dishes where the absolute protagonist was the raw material of the popular tradition reinvented with genius both in cooking techniques and in food combinations.

An innovation that earned Aimo and Nadia the Michelin star in 1980 and an increasingly international success. Leaving the guide to the kitchen, but not the love for their work, at the end of the 90s his daughter Stefania enters the management of the restaurant and, together, they decide to lay the foundations for the future by entrusting the kitchen to those who at the time were two young and promising chefs: Alessandro Negrini and Fabio Pisani.
An intuition that allowed them, thanks to the new “family”, to obtain for Il Luogo di Aimo e Nadia, as the restaurant born from the historic trattoria is called today, the second Michelin star in 2007 and to create a “universe” of new realities based on the core values ​​of Aimo and Nadia: the enhancement of Italian gastronomic history and the search for emotion in every dish.

In 2018 Stefania, Alessandro and Fabio opened the bistRo, a wonderful union between Aimo and Nadia and the space of Rossana Orlandi, a famous Milanese gallery owner, and Vòce, designed by the famous architect Michele De Lucchi. Its interiors enhance the historical French and Viennese influences of the building with contemporary bistro touches such as the Pastis and Porto tables by Gebrüder Thonet Vienna and the Radetzky chairs designed by De Lucchi himself.

The culinary proposal of Vòce is intertwined with the cultural one of the Museum: the menus offer tributes to the great artists present in the collections, such as Hayez, to whom the Bacio caramel dessert with salt puffs and Amarelli liquorice was dedicated, or Canova for which was created a dish based on the delicious lard from Colonnata left to flavor in marble basins, the main material with which the famous sculptor worked.

For Aimo and Nadia, yesterday as today, a perfect dish requires a special relationship with trusted suppliers, over 86 throughout Italy. A partnership for each of them that goes beyond the mere sale of the product, to study its creation and characteristics together. Some suppliers have been the same for over 45 years, such as the butcher Boves of Cuneo, others such as those of the capers of Pantelleria, of the salt of Mozia in Trapani, or of the wild herbs and flowers that grow on Monte Baro, select their products exclusively for the Group’s restaurants.

The gastronomic offer of Vòce is varied: the restaurant’s gourmet proposal, in addition to à la carte menu, ranges from vertical caviar tastings to raw fish dishes such as the Plateau Royal Voce based on oysters, purple prawns from Sanremo, cuttlefish tagliatelle, amberjack carpaccio and fish of the day tartare, while the more informal bar and bistro range from coffee options to breakfasts, from lunches based on salads and focaccias to aperitifs.

Obviously, the products that can be purchased in the store deserve a very special mention. From those by Vòce such as pralines, preserves, as well as the legendary panettone by Aimo and Nadia to the best of Italian products of excellence such as the coffee blends of Gianni Frasi, fresh bread based on ancient grains and mother yeast, Calvisius caviar, Thun honey, Spigaroli naturally cured meats.

The Secret

After the death of the famous writer Alessandro Manzoni, his house was sold at auction and purchased by Count Bernardo Arnaboldi Cazzaniga who luckily decided to keep the writer’s study and bedroom as they were without making any changes. The property then passed to the Villa brothers who sold the writer’s garden, which now houses Vòce in Giardino, to the then Banca Commerciale Italiana, then conveyed to the Intesa Sanpaolo group which reopened it to the public in 2015.
