In Rovato, Al Malò is a unique gourmet format in Franciacorta where you can enjoy a romantic fine dining experience and excellent cocktails, amidst design furnishings and exotic wallpapers.
Overlooking the central square of the town, Al Malò is the reign of chef Mauro Zacchetti, with experience alongside starred chefs Gualtiero Marchesi, Norbert Niederkofler, Andrea Berton e Philippe Léveillé, and of the mixology lounge of Lodovico Calabria, famous throughout Brescia for his cocktails.
Opened in 2019 by Alberto, recently passed away, Mauro and Lodovico (Al Malò is, in fact, the acronym of their names) with the dream, after various experiences around the world, to open a place together, it soon became a point of reference in Franciacorta by bringing to the region the first place with an international vibe and a creative cuisine of great quality.
At Al Malò we are like a family, always present in the dining room and behind the bar counter to offer our customers the best of Franciacorta.
With the idea of creating a relaxed environment where you can forget the here and now, the first detail chosen by the three partners and friends for their restaurant was the wallpaper of the room on the first floor: the beautiful Savuti by Cole and Son inspired by a garden with exotic plants and animals. The sophisticated interior design is completed by teal-colored chairs and deco-inspired lights while, on the ground floor dedicated to the bar area, the large counter with golden reflections steals the show, the alchemical reign of Lodovico who personally designed it in every detail.
The cuisine focuses on ingredients with a clear flavor that satisfy the palate, such as duck, lamb, veal or lake trout, processed with Asian influences, spices and short cooking to enhance the taste. Just to bring out the raw material, the chef accompanies every second to a side dish: so, for example, the leg of pigeon lacquered with honey is served with brioche bread and its livers, a contrasting combination designed to emphasize the aromas.
On the menu, which offers the possibility of ordering half portions to favor the testing of more dishes, we find creative recipes such as duck breast, Jerusalem artichoke and lovage with duck jus, braised leg with crunchy skin, braised duck raviolini and lemongrass consommé or Spaghetto with Franciacorta Rosé and oysters, but also tradition-inspired dishes such as Spaghettone alla Milanese.
The wine list has more than 300 labels, carefully chosen by Lodovico, ranging from the great producers of Franciacorta to artisan wineries that make less than 10,000 bottles a year such as Monte Alto near Lake Iseo.
The restaurant on the first floor opens for lunch and dinner, while the mixology lounge with external dehor on Piazza Cavour opens only in the evening. Do not miss the aperitif with the signature drinks of the place such as the Vecchio Boulevardier Parte Terza, a cocktail based on Bitter Fusetti, Red Vermouth, Bourbon and smoked with oak wood that Lodovico had to leave in the menu given the great success among his customers.
The Secret
In the basement, Al Malò hides a gourmet speakeasy, which offers an “extreme” drink menu, where Lodovico likes to invite his customers for fun tastings or special after dinner cocktails.
